Oh Pressure Cooker how I love thee!!! With us being under major house remodeling and my solace, the kitchen, being completely gutted I've been pushed to be seriously creative in how I can make real meals (sorry but one can only live on cereal, peanut butter and jello or go out to eat so much).  Now using a pressure cooker is old news now for me ever since I took the plunge 2 years ago and purchased my first pressure cooker.  That first dish I cooked in it revolutionized the way I cook and the way I preached about it over and over (and over) to you guys.  Now look at it!  It's now the hottest thing out there kitchen-porn wise. So today I'm sharing with you 2 things I love – my pressure cooker and beef short ribs. While I have some amazing recipes on here for short ribs, if you are oven-less like I am, you can still make them.  So sit back and drool over these Pressure Cooker Beef Short Ribs with Potatoes and Carrots!

Now what's sad, and kinda funny in an ironic and I'm gonna kill you darling husband if you don't get that damn kitchen done soon, is when I made this, I literally had to do all of this in a make shift stand in my master bedroom.  No, for real — I made this entire dish IN MY BEDROOM!  I don't know if that's kinky or not but… hey wait a minute.  Do you think that's how it got the name "Food Porn" in the first place???  *GASP!*   lol

What's even funnier is Mr. Fantabulous was watching me but not really paying much attention to me as I was carrying stuff from the cupboards and dining room to the bedroom.  He was preoccupied with the remodeling to really give it a second thought.  That is, until he saw me carry in the package of short ribs and carrots and head towards the bedroom. He put down the drill and looked at me with the "WTH???" face. I just smiled, said I was going to work.  He then just shook his head and said "Um, not gonna ask".

LOL exactly don't ask, just let me take my short ribs and veggies to the bedroom and shush your face.

So there I stood, in my bedroom with a card table set up, my cutting board, single cutting knife and all of my herbs and meat.  LOL  I have to admit, I was giggling the whole time as I was prepping stuff.  Since obviously I didn't have a gas line in my bedroom I opted for the electric cooker however I have made this in my gas one as well and it turns out equally as amazing. After about eh, 10 minutes of prep this thing was set to go and I was off to go help out in the kitchen.

If you've never lived through a remodel on your house/apartment/what not let me state this – it sucks.  Seriously move out, heck even into one of those apartment-style hotels while it's being done. One room, it's nottoo bad as the rest of the house is usable.  Now if you do an entire floor, yeah, that's pretty crappy but again, it's manageable.  BUT when you do an entire floor AND the kitchen… it SUUUUUUUUUUCKS royally!  Okay fine maybe you're one of those that don't cook (which if you don't you should hire me to come do it for you then but I want an actual kitchen to do it in) but for me the kitchen is my lifeline.

I mean not even having a kitchen sink or the ability to get water from there is terrible.  And I'm sorry but I REFUSE to drink water from a bathroom sink.  Yes I know I brush my teeth there and yes I know it's the same water supply that feeds my kitchen stuff but…it's the bathroom! Plus my kitchen water all runs through this special filtration contraption that is in one of the 'man' rooms downstairs.

You see in my house I have Lori rooms, Mr. Fantabulous rooms, common rooms and "I'm not cleaning that room as you used it last" rooms. For me it's pretty straightforward – kitchen, dining room (though he tends to take it over and leave his crap there), master bedroom, master bath, formal living room and laundry room (don't tell him this but I kinda like doing laundry). His rooms are 2 of the other bedrooms, the powder room, the gym, the pool house, the utility room, studio and all of the garages plus the 2 buildings on the property.  The common rooms are the office, the other bathrooms, media and billiard rooms.  Rooms that I'm not claiming – office and at times, the dining room. Yes I know we both use it but he makes it dirty, not me.

I swear I could have a laundry chute in every single room of my house and there would STILL be dirty clothes on the floor. There could be a kitchen sink in every room and there would STILL be dirty dishes put on MY desk.  Does your loved one do this?  They dirty something but then 'store' it on 'your' stuff?  Drives me nuts!

So yeah, needless to say I doubt I'll ever go through another remodel again. Well I take that back.  I would IF I could move out while it was being done.  No matter how much you cover the stuff with plastic and sheets it still gets dusty. I mean how in the hell does dust get INTO your cupboards even with the doors closed?! But I'm slowly starting to see the light at the end of the tunnel with this remodel.  It's just we have so much work left to do if we want to get it on the market by May 1st.  If you're reading this and you live close, come help. I can't feed you just yet but when I have my house back I'll feed you. LOL

Anyway, back to my story. About an hour goes by and I hear the timer going off…from the bedroom.As I was walking down the hall to my room you could smell the short ribs cooking and folks let me tell you what, without sounding weird or creepy, the smells coming from my bedroom were AMAZING!  Yeah go on, you can giggle and raise an eyebrow.  Trust me, I giggled too as I was typing it.  But OMG the smell of those short ribs were something short of divine!

When I opened up the lid I was hit with a waft of beefy goodness that you just could not deny.  After about 10 or so everything was done and I had "set" the floor for us to eat.  Since we really can't access our dining room due to all the crap from the kitchen being loaded in there plus the dust we ended up having a 'picnic' style dinner on the bedroom floor.  So to set the mood I lit some candles, put on the white noise machine to give us some background sounds and called him into the bedroom.

It was actually kinda romantic in a covered-in-construction-dust way.  The short ribs were fork tender which was great as I couldn't find the knives.  The potatoes and carrots were steamed perfectly and had the beef 'steam' and herbs infused into them.  It was funny as we were eating this he kept saying "I can't believe you made this without a kitchen.  How does one even do that?  I mean seriously honey… How do you do what you do???"

I got the biggest smile on my face as to me that was such an incredible compliment that I literally got tears in my eyes.  It was so honest, so genuine that it moved me.  Between forkfuls he looked at me gave me a smile and wink because he knew he touched my heart.

Whether you have a kitchen or not you can still make this – well okay you need a pressure cooker obviously but trust me, you're going to fall in love with this recipe and pressure cooking!

Ingredients

  • 3 large boneless beef short ribs (about 2 1/2 pounds)
  • 3/4 cup apple cider (not vinegar)
  • 1 cup yellow onion, rough chopped
  • 1 tablespoon garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup flour
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire
  • 2 tablespoon butter, unsalted
  • 2 tablespoon olive oil
  • 4 whole carrots, cut 3-4" sections
  • 2 golden yellow potatoes, cut into 2" cubes
  • 2 tablespoon cornstarch
  • 2 tablespoon water

Instructions

  1. Set your Gas Pressure Cooker pot over medium high heat and add the butter and oil. If using an Electric Pressure Cooker with a browning function, turn it on to brown.
  2. In a shallow pan season the flour with 1 teaspoon salt and 1/2 teaspoon pepper. Pat the meat dry and then dredge the ribs in the flour coating all sides. Place the beef into the pot and pan sear until brown on all sides. ~5-8 minutes. Work in batches if necessary. Remove the beef from the pot and set aside.
  3. Add in the onions and garlic to the pot and cook for about 5 minutes or until the onions are soft and translucent. Add in the cider, 1/2 cup of broth, Worcestershire and using a wooden spoon gently scrape up the browned bits on the bottom. Allow to bubble for 2 minutes. Add in the beef.
  4. Place the carrots and potatoes into steamer basket for your pressure cooker and place it into the pressure cooker and sprinkle on the remaining bit of salt and pepper. Be sure the steamer basket doesn't sit on top of the beef. You need to ensure there's airflow between the beef and the veggies.
  5. Place the lid on, lock and bring the heat to high (if using gas) and set the timer to 35 minutes. On gas PC it beeps when it gets to pressure. Once it does that, reduce the heat to medium low/low. If using an electric pc, set it to high and the timer for 35 minutes.
  6. When the timer is up, allow for a natural release (15 minutes). Remove the steamer basket from the pot and set aside. Test the beef for tenderness – if it's not tender enough to your liking, replace the lid (leave the vegetables out) and pressure cook for another 5-10 minutes. For me, 35 minutes was perfect. Once done, gently remove the ribs from the pot. If you want to make a sauce with a slotted spoon scoop out the onions, set aside and then strain the fat (discard).
  7. Place the juices plus 1/2 cup of broth back into the pot and turn the heat to high (for an electric pc set it to browning) bringing the liquid up to a boil. In a small bowl whisk together the water and cornstarch. While whisking the juices in the pot, pour in the cornstarch slurry.
  8. Add the onions back into the sauce and reduce to medium until thickened. Prior to serving taste for seasoning. Plate the ribs with potatoes, carrots and spoon the onion rib sauce over top of the ribs.
